When my parents moved away from New Jersey, I was sad for a few different reasons. No more quick weekend trips home whenever I was feeling needy, no more easy access to a car, having to find a new dentist, like an adult. Ya know, just some truly devastating inconveniences. But one thing I’m really missing in this cool, fall weather that’s finally arrived, is my favorite soup from Market Basket in Franklin Lakes, NJ – creamy tomato soup with ravioli.

The weather in suburban New Jersey today is ideal for the lazy vacation day I’m taking. It’s one of my favorite kinds of days: a grey and drizzly day in December during which I feel perfectly content to order Christmas presents from bed while snuggling with one of my loving pets. What it is, is the perfect afternoon for a bowl of soup. But all of my soup is in Brooklyn, frozen and waiting for me to have the forethought to thaw it before I want it. Where did I learn how to do that? Well, from my mother, who also has several soup varieties sitting downstairs in her freezer, perfectly frozen and hard as a rock.

I’ve been in a funk lately. Maybe it’s the transition from two and half weeks off to a full week at the office. Maybe it’s the uncomfortably low temperatures that January brings. Or maybe it’s the fact that everything I’ve tried to blog in the past week has been unsatisfactory. Who knows? All I know is that 2015 has been off to a weird, cold start and I needed something to snap me out of it. That something came in the form of a luscious, creamy Vermont Cheddar Soup.

Spicy Tomato Soup with Blue Cheese

The season of soups and stews is upon us, and this year I’m ready to fully embrace it. I don’t know what got me so jazzed for soups all of a sudden. Maybe it’s because I got a Le Creuset last Christmas and haven’t been able to use it regularly yet. Maybe it’s because I’ve been perusing my Pinterest during the changing of seasons and found some intriguing recipes (see here, here, and here). Maybe it’s because soup makes great leftovers and I’m getting sick of a kale salad for lunch every day. Either way, I made my first batch of homemade chicken stock last weekend and boy am I itchin’ to use it.
